 | Coley fillets. Spawning Jan - Mar. A fine robust fish that can withstand robust flavours and can be an ideal substitute to Cod. Try it and be suprised.

 | Haddock fillets. Spawning Feb - Jun. A nations second choice in fish and chips. Under strict fishing controls, this fish has a more delicate flavour than Cod and a softer less flaky texture.

 | Mackerel. Spawning Mar - July. These fish are delicious when extremely fresh, but not worth eating when they are past their best. The smaller ones tend to have the richer flavour.

 | Sardine. Spawning Dec - May. Caught of the Cornish coast from a healthy well managed fishery by a small family run boat. Quick and easy to cook. Season well and grill under or over a really high heat so the skin crisps nicely.
